Aristos is out to create a tasty feast, so he starts early and heads down to the wharf to meet up with the fishermen as they come in from their morning fishing trip. He selects the biggest and freshest fish he can find and then ventures on to re-explore some of his favourite local spots to get the remaining ingredients.
Zakros is the kind of town where there's not much to do, but if you're determined to see the sights and stretch your legs, just a few minutes from the beach is a massive gorge known as The Valley of the Dead.
The caves in the Valley of the Dead actually house ancient Minoan tombs, and while it may sound a little scary, the dozens of mountain goats that have found residence here don't seem to mind. Anyone can wander through the gorge and pick some herbs and in July the fields are absolutely flooded with them, including fresh oregano.
With ingredients collected it's time for Aristos to cook up his fishy creation. The fish should be grilled for about 15 minutes on medium to high heat. While it's cooking you can make the dressing, using the juice of one lemon to blend the two flavours together. Once the dressing has been beaten, remove the fish from the heat and dress it. The result is fish ala Zakros - beautiful.
