Recipe for Green Coconut Curry with Chicken or Beef (featured in story)

200 gm chicken breast or beef, sliced

300 ml fresh coconut milk

30 gm green curry paste

40 gm pea eggplant

crispy eggplant sliced in half

5 gm sweet basil leaves

10 gm red chili - big slices

2 pcs kaffir lime leaves

2 tablespoons fish sauce

A half teaspoon sugar

1. Heat up 1 tablespoon of vegetable oil, add green curry paste and coconut milk.

2. Add chicken breast.

3. Add the two kinds of eggplant.

4. Season with fish sauce, sugar and sweet basil leaves.

5. Garnish with sliced red chili.
